Tomato Soup & Grilled Cheese…

tomato soup So… I splurged and had to share it with you because it was that delicious. Like I mentioned in my Minestrone post, I’m all about making my own soups because store-bought ones are often loaded with unnecessary amounts of sodium. Thanks to my BFF @MondalenaNikc, I got my recipe from a wonderful food blog, A Cozy Kitchen. I slightly modified it by eliminating the sugar completely and reducing the salt & cream content. Goat cheese is definitely is a must in this recipe and it will add the perfect amount of savory-ness to this warming meal. Serve it with a grilled cheese and everyone will want to be your best friend on a rainy day that calls for comfort food and binging on bad TV.

 Ingredients

2 tbsp. olive oil

1 onion, chopped

2 cloves garlic, minced

3 cups chicken stock

1 can San Marzano tomatoes, crushed 

1 tbsp. tomato paste 

1/4 tsp. kosher salt

1/2 tsp. red pepper flakes 

1/4 cup heavy cream

3 oz. goat cheese

Grilled Cheese

4 slices bread

(I chose ciabatta but anything will do!)

2 tbsp. olive oil

2 oz Gruyere cheese, grated

2 oz. Havarti cheese, grated 

Directions

1. Heat up olive oil and onions in a large pot until tender

2. Add garlic in after ~6 minutes and cook for 2 additional minutes

3. Mix in: tomatoes, tomato paste, chicken stock, salt & pepper

4. Let simmer on low heat for ~15 minutes

5. Carefully put the mixture into a blender on low and place back in the pot

6. Put the soup back on low heat and mix in the cream and goat cheese
