Almond Meal Chicken Cutlets

Growing up in an Italian home, chicken cutlets was always a safe dinner choice for my family. With some leftover almond meal in my cabinet, I decided to experiment in making my favorite comfort meal because in moderation, breading foods can be extremely savory and satisfying (although, I probably don’t need to tell you that part). Almond meal is an ingredient made from whole or blanched almonds: high in protein, vitamin E, and monounsaturated fats. Experimenting to change up a family recipe with this nutrient dense bread crumb alternative was risky, as I’m certain that my adorable and authentic Italian Grandma Pina would be… insulted confused.

Cooking with this nutritious ingredient is a great way to incorporate the health benefits of almonds into your diet while cutting back on carbohydrate consumption. For those of you inspired by whatever diet has recently caught your attention, almond meal is the perfect choice for those following a low carbohydrate or Paleo Diet and it is also an ideal addition to a gluten free diet.

2 Chicken Cutlets, pounded

4 Eggs (depending on how much chicken is being made)

1 cup Almond Meal

3 tbsp. Paprika 

2 tbsp. Seasoning Mix

2 tbsp. Grated Parmesan Cheese

Salt & Pepper 

Directions 

In a small bowl, whisk together the eggs

In a shallow bowl or plate, mix together: almond meal, paprika, seasoning, parmesan cheese, salt & pepper

Dip chicken pieces into the egg mixture

Hold the chicken pieces over the bowl to make sure you have only a thin layer of egg mixture

Place chicken pieces into the dry mixture, making sure they are completely coated

Gently place chicken into a pan with simmering oil

Top with your favorite veggies and enjoy!
