‘Nana Loaf

nana loaf B-A-N-A-N-A-S…for banana bread!

Confession: I have a huge sweet tooth. And to me, there is no better treat than the blend of banana, chocolate, and peanut butter. Thanks to mom, this loaf was the staple baked good in my house growing up and all my friends knew it. Because it’s not necessarily the healthiest of habits, I’ve decided to modify the family recipe so I can satisfy my incessant craving, guilt-free!

* 1 1/4 cups of whole wheat flour

* 1 1/4 cups of white flour

* 2 tsp. baking powder

* 1/4 tsp. salt

* 1/4 tsp. cinnamon

* 1 large egg

* 1/3 cup brown sugar

* 1 tbsp. agave nectar

(It’s a great replacement for half the sugar requirement when baking)

* 1 tsp. vanilla extract

* 1/2 cup apple sauce

(healthful substitute for butter when baking. it adds a sweet flavor!)

* 1/2 cup melted crunchy peanut butter (no salt added)

* 4 mashed bananas

* 1/3 cup non-fat milk

* 3 tbsp. baking cocoa

1. Preheat oven to 350*

2. Spray a loaf pan with non-stick spray (coconut oil spray is my go-to)

3. Mix together: flour, baking soda, salt, cinnamon, and baking cocoa

4. In a separate bowl mix together: eggs, sugar, vanilla, peanut butter, and apple sauce

5. Slowly mix the wet and dry ingredients together

6. Pour batter into the loaf pan

7. Bake for 50-60 minutes or until center is fully cooked
