Yummy Of The Week: Keen-Wah Burrito Bowl

I am a guilty Chipotle lover. While the full on burritos are delicious, the burrito bowls have become my selection of choice (gotta be somewhat self-controlling). So, after a long day of classes and an effective trip to the gym, I decided to create one of my favorite meals using tasteful substitutions. I am proud to say that this weeks yummy, the quinoa burrito bowl, was made by yours truly. It is perfect for you college students as it’s relatively cheap, quick, and full of nutritional value.

Originating from South America, quinoa has become quite the popular food trend in the American diet within the past ten years. Fun Fact: According to the Whole Grains Council, this trendy protein-packed grain is gluten free, filled with fiber and iron, AND low in cholesterol and sodium! Bloating be gone! And just in time for Spring Break…

The combination of protein and fiber from black beans and quinoa, healthy fat from avocado, and antioxidants from spinach and peppers left me full and satisfied. This power meal can be seen as too perfect for you vegetarians as it contains a “complete protein.” As reported by my favorite online food log, FitDay, the combination of two incomplete proteins, such as quinoa & black beans, creates enough essential amino acids to make the wheat protein a complete one: more useful for growth  and development of hormones, antibodies and tissues.

Directions:

1. Set the oven to 375*.

2. Start out by rinsing he quinoa. Then, I suggest boiling 1/2 cup of quinoa with 1 cup of vegetable or chicken broth for flavoring. No need to add salt! Once it comes to a boil, cover and simmer until the grain becomes saturated and you see the spiral sprout.

3. While that is cooking, slice peppers, onions, and cherry tomatoes (or your favorite veggie) with 1 tbsp. of olive oil, a pinch of salt, and some cayenne pepper for taste. Place in the oven for ~10-15 minutes.

4. Place spinach leaves at the bottom of your bowl. Add quinoa and top with 2 tbsp. of black beans. Follow by adding the peppers and onions. Slice avocado on top and you have yourself a fiesta!

  2. This sounds simple enough for a college student! Is it a lot worse (more fattening) if you put the peppers in a frying pan instead?

    • Yes it’s perfect for college students and you can choose to cook the peppers in a frying pan or bake in the oven. Use the same amount of olive oil whichever way you decide to cook it! Sautee in a frying pan until golden brown on the edges or place in the oven at 400* for about 10 minutes (not too long so the nutrients are still there). Enjoy!
